leftovers pizza


Lunch today. Bought pizza bases (left over from the other night), ready-made pizza sauce, spinach leaves, sliced pumpkin, mozzarella/grated cheddar mix - all leftovers, now the only thing left is three more pizza bases.
Now it’s just a matter of deciding what to put on the ones I’ve got left…
honey oat bars
These are a lot tastier than the unflattering iPhone-taken photo (my last post) would have you think. And they’re easy to make. And don’t use many dishes. Perfect recipe? Got to be close.
Ingredients
1 cup rolled oats
1 cup sultanas
1/2 cup self raising flour
1/2 cup raw sugar
1/2 cup coconut
155g butter
1 tablespoon honey
Method
Combine oats, sultanas, sifted flour, sugar and coconut in a bowl. Melt the butter, add the honey, mix into dry ingredients until the mixture clings together.
Press evenly over base of a well-greased lamington tin (11in x 7in/28cm x 18cm).
Bake in moderate oven 15-20 minutes or until golden, cut while hot and remove from tin when cold.
