leftovers pizza
Lunch today. Bought pizza bases (left over from the other night), ready-made pizza sauce, spinach leaves, sliced pumpkin, mozzarella/grated cheddar mix - all leftovers, now the only thing left is three more pizza bases.
Now it’s just a matter of deciding what to put on the ones I’ve got left…

honey oat bars
These are a lot tastier than the unflattering iPhone-taken photo (my last post) would have you think. And they’re easy to make. And don’t use many dishes. Perfect recipe? Got to be close.

1 cup sultanas
1/2 cup self raising flour
1/2 cup raw sugar
1/2 cup coconut
155g butter
1 tablespoon honey

pink fruit salad
This is one of my Mum’s recipes, I think she may have adapted it from either an issue of Good Taste magazine or The Age’s Good Weekend magazine.
This super easy dessert is great to make in a big batch when you have the time - if anything it improves with time as the syrup intensifies.
Ingredients
Watermelon
Red seedless grapes
Frozen berries
Fresh strawberries
1/3 cup sugar
2/3...

enchiladas
For me, today marks two months of being a vegetarian.
The first main meal I ate as a vego I remember distinctly, as I was at a friend’s house before going to see Tim Minchin at the Melbourne International Comedy Festival.
This is the super lazy version, it definitely doesn’t have all the nutritional requirements of a main meal and has a lot of carbohydrates, but with some tweaking it...

eating for one - healthily
It’s currently the exam period at uni, so I have even less time to cook than normal.
I have an exam tomorrow morning, and so tonight I dug out a lentil burger (it’ll be a bit hit and miss until you find a good one!) from my freezer, defrosted it in the microwave, crisped up the outside in the toasted sandwich maker, put it in a roll I bought from the local IGA on the way home along...

ooey gooey chocolate cake
This doesn’t exactly come under the ‘healthy’ banner, but it is cheap and easy - you probably already have every ingredient in the pantry.
Technically it’s a brownie cake, with a crust (the ooey) and a soft centre (the gooey), so named by my brother and I as kids.
Ingredients
1 1/4 cups sugar
2/3 cup self raising flour
4 tablespoons cocoa
85g butter (the recipe...

lazy canneloni
My housemate and I have very different tastes in food so often cook independently, and so I like to make food that doesn’t give perishable leftover ingredients (such as ricotta) that I don’t use in many other recipes. The spinach to ricotta ratio in this recipe is just right and unused filling can be frozen for another time.
Ingredients
1 box canneloni tubes (there’ll probably...

satay sauce
The recipe is my Mum’s, and a lot better than bottled ones even though it’s almost as easy to make!
In typical my-Mum style, quantities are complete guess (and taste) work.
Ingredients
Peanut butter
Tinned light coconut milk (or evaporated milk + coconut essence)
Sweet chilli sauce
Kecap manis (sweet soy sauce)
Stir fried vegetables - such as bok choy, carrot, sugar snap peas,...

chocolate chai
Ingredients
Chai tea
Cocoa
Sugar
Milk
Method
There are two ways of making this tasty version of chai; both are below.
Method 1: The Long Way
For each person, add 2/3 cup of water, 1 teaspoon of chai tea, 1 teaspoon of cocoa and 1 teaspoon of sugar to a saucepan.
Bring to the boil over medium heat, stirring occasionally. Keep the lid on when you’re not stirring.
Switch off the...
